La grande famille des pêches, toutes issues de l’espèce Prunus persica, compte de nombreuses variétés. 300 coexistent en France, dont les plus consommées sont les pêches, les nectarines, les brugnons et les pavies (pêches plates).
Les pêches
Les pêches, au sens strict du terme, représentent environ 60% de la production française.
Celles à chair blanche y comptent pour 40 % avec notamment les variétés Patty® Zaisito, Onyx® Monalu cov, Maura® Zaifisan, Ivoire®Monivo cov, Surprise cov, White Red, Couloured® Couloubelle, Benedicte® Meydicte, Bellerime® Maillarime cov ou encore Valentine® Maillarmaline cov.
Les variétés à chair jaune représentent quant à elles 60 % et ont pour noms Rich Lady cov, Summer Rich cov, Rome Star cov, Summer lady cov, Spring Lady® Merspri cov, Coraline®Monco cov, Royal Lee® Zaipela cov, Royal Pride® Zaisula cov, Big Sun® Maillarbig cov ou encore Plusplus® Maillarplus.cov.
Robe : Leur peau veloutée est de couleur orangée à pourpre.
En bouche : Leur chair est parfumée, sucrée et légèrement acidulée.
LES NECTARINES ET LES BRUGNONS
Ces deux variétés de pêche couvrent 40% de la production des pêchers français.
Ces fruits se distinguent par leur peau lisse et brillante. C’est au noyau que vous pouvez les différencier : celui du brugnon adhère à la pulpe tandis que celui de la nectarine se détache facilementde la chair.
Contrairement à une idée reçue, ils ne sont pas issus d’un croisement entre la pêche et la prune.
Pour les variétés à chair blanche, citons Garcica cov, Snow Ball cov, Brareg cov, Zephir® Monphir ou bien Jade® Momée cov.
En ce qui concerne celles à chair jaune, on y trouve Diamond Bright cov, Honey Royale cov, Nestaross cov, Honey Glo cov, Savana Red cov, Western Red cov, Septembre Bright cov, Big Top® Zaitaibo ou Nectapom®.
Robe : De couleur jaune orangé, elle revêt aussi des tons de rouge et de rose.
En bouche : Ferme et savoureuse, leur chair jaune, ou blanche est sucrée.
Les nectarines ont de plus en plus de succès par rapport à la pêche.
Les consommateurs, notamment les plus jeunes générations, semblent préférer de plus en plus la nectarine à la pêche ; peut-être parce qu'elle n'a pas de duvet et qu'elle peut se manger plus croquante.
La pêche de vigne
Cette variété tardive se retrouve sur les étals en septembre et en octobre. Elle est principalement cultivée sur les coteaux du Lyonnais et la vallée du Rhône.
Robe : elle se teinte de beige rosé ou de gris, voire de violet.
En bouche : sa chair, de couleur jaune ou violacée, est douce et très fondante.
